Who I am
My name is Paolo, I was born in the northern part of Italy where I grew up with the delicacies that my grandmothers cooked continuously.
When I was 20 years old, I moved to London and started my journey into the life of hospitality, from there I traveled around for the following 10 years, met interesting people, discovered incredible places and got to know many different culinary cultures.
15 years ago I arrived in Tuscany and decided to settle in this beautiful corner of the world, during this time I worked with great persons, I have been the executive chef for luxury hotels, helped to develop and open new restaurants, also experience the movie world, cooking for the stars of Wes Anderson’s “The Grand Budapest Hotel” thanks to all this, I learned a lot and had the chance to develop my very own idea about sustainable high-class tourism, so in 2016 I decided to start Gusto Evoluto.
